For thousands of years, mushrooms have been valued
throughout the world as food and medicine. Western
Medicine has recognized the health-stimulating
properties of mushrooms; the single most valuable
antibiotic, penicillin, was obtained from a fungus.
Mushrooms are rich in a wide variety of important
nutrients, including amino acids, B vitamins and
vitamin D. Our selections combine tastiness with
high concentrations of beta glucans, long chain
polysaccharides that have strong effects on the
immune system. Beta glucans are the most potent
anti-tumor compounds in mushrooms - they stimulate
receptors found on neutrophils, monocytes, and
natural killer cells of the immune system.
These natural compounds have proven useful in
the treatment of both immune system deficiencies
and autoimmune disorders - allergies, asthma and
many other medical problems. Regardless of whether
the pathology of the immune system is overactive
or underactive, mushrooms have a beneficial regulating
effect. They are tonics and may be beneficially
used on a regular, ongoing basis, and for conditions
as diverse as loss of libido and high blood pressure.
We have selected four mushrooms renowned for
their wonderful flavors and powerful medicinal
properties - Maitake, King Oyster, Agaricus, and
Cordyceps. They are great in stews, soups and
sauces. My favorite is to mix a half-teaspoon
of powder with melted raw butter and have it over
meat, fish or chicken. Our eight-ounce packages
each yield 96 one-half teaspoon servings.
Agaricus was originally discovered
in Brazil, where the local people know it as the
Mushroom of God. It is regarded as a health food
in many countries and is thought to prevent senility.
Agaricus is especially rich in beta glucans and
other polysaccharides and has been shown in clinical
trials to restrain tumor growth and enhance low
white blood cell counts. It has a potent anti-allergy
effect, improves liver function, and supports
the pancreas. The mild, sweet flavor gently enhances
the taste of soups and sauces and reminds some
people of the taste of almonds - in fact, Agaricus
is sometimes called the almond mushroom.

Cordyceps has a nutty sweetish taste,
the strongest and most flavorful of our mushrooms.
It has long been used in Traditional Chinese Medicine
to treat symptoms associated with the lungs and
the kidneys. Research has shown benefit for the
liver and the immune system, and significant help
in heart disease. Cordyceps has a marked effect
on fatigue and libido and has improved endurance
in competitive athletes. Conditions helped in clinical
trials include arrhythmias of the heart, liver disease,
asthma, impotence, diabetes, chronic fatigue and
kidney disease.

The King Oyster mushroom also has
an almond-like flavor and is native to Mediterranean
regions of Europe, the Middle East, and North Africa;
it is also grown in parts of Asia. In China it is
known as the "almond abalone mushroom."
Also known as the Royal Trumpet, the robust King
Oyster is a gourmet mushroom with a superior flavor
to other species of oyster mushrooms. The mild,
appealing flavor and fragrance have made it a favorite
of connoisseur chefs - it is wonderful in soups,
stews and meat sauces.
As are our other selections, King Oyster
is rich in many biologically and medicinally active
compounds, including beta glucans with strong regulatory
effects on the immune system.
Maitake has a light, mild flavor - the
mildest of our four selections - and has been used
in Chinese and Japanese cooking for centuries. Maitake
D-fraction, rich in beta (1,6) glucans, activates
T cells in the immune system. Clinical trials with
Maitake at Japan's Kube Pharmaceutical University
in 1995 found significant reductions in the growth
of breast, lung, liver and prostate cancers.
